Copenhagen’s culinary jewel noma has joined forces, yet again, with Ace Hotel. This time, the three Michelin star restaurant will return to Japan for a 10-week residency at the Ace Hotel Kyoto. Opening its doors for lunch and dinner four times a week from March 15 to May 20, 2023, noma will offer an exclusive tasting menu inspired by the kaiseki cuisine, created by the process of foraging and researching hyper-local ingredients.

“I believe Kyoto to be the birthplace of the western tasting menu, and it remains one of the most important cities through which to understand the fine dining scene today. Much of my own journey and inspiration can be boiled down to a handful of important moments, and going to Japan and Kyoto for the first time is one of them. We have always wanted to return and explore this region as a team.” René Redzepi, chef and owner of noma, shares. 

The noma team has been working for two years on this residency, deepening the restaurant’s long-standing admiration of and connection to Japanese cuisine. The hosts also come as perfect collaborators — Ace Hotel Kyoto is an homage to the rich history and traditions of the city, inspired by its creative culture, respect for nature, and revered elevation of craft.
