The most anticipated restaurant and bar openings in Las Vegas this spring
Restaurants may be taking a slower approach to opening in 2021, but already a number of big names and fan favorites plan to make their debuts this spring. Virgin Hotels brings 12 new food and beverage outlets to the former Hard Rock Hotel, while Caesars Palace gets a new restaurant from Bobby Flay and a sports bar. The Venetian lands Estiatorio Milos, which moved from the Cosmopolitan of Las Vegas. David Chang has a new spot coming to the Cosmopolitan. Virgin Hotels
Location: 4455 Harmon Ave., in the former Hard Rock Hotel.
Projected Opening: March 25
Virgin Hotels opens in 2021, and the resort continues to remodel the former Hard Rock Hotel on the east side of Las Vegas. Three hotel towers feature more than 1,500 rooms and suites; a 60,000-square-foot Mohegan Sun Casino, operated by Mohegan Gaming & Entertainment; a five-acre pool with an event lawn; live music with space for 4,500; a showroom for 650; and 12 food and beverage venues. Dining options include the return of Todd English’s Olives; Kris Yenbamroong’s Los Angeles Thai gem Night + Market; the legendary sushi restaurant Nobu; Michael and David Morton’s One Steakhouse; Kassi Beach Club, now Kassi Beach House, from restaurateur Nick Mathers; Casa Calavera by Hakkasan Group; as well as the sports entertainment, daylife, and nightlife venue Money, Baby! from Clive Collective. Estiatorio Milos
Location: Venetian
Projected Opening: March 15
Estiatorio Milos, the Greek seafood restaurant from Costas Spiliadis, reveals its new space at the Venetian. The 10-year Strip veteran departed the Cosmopolitan of Las Vegas last year to move its Mediterranean-inspired seafood menu to the Venetian’s restaurant row. Milos takes over the 13,624 square feet of shuttered seafood restaurant Aquaknox. Milos flies its seafood in daily from the Mediterranean then displays it in the restaurant’s fish market, where customers can pick their dinners. Whole fish in sea salt, tuna, lobster, salmon, and octopus make the menu, along with the Milos Special, a tower of fried paper-thin zucchini and eggplant with tzatziki at the base and within.

After 16 years, chef Bobby Flay’s Mesa Grill closed at Caesars Palace after service on November 14 to make way for Amalfi by Bobby Flay. Flay’s new restaurant marks Flay’s first Italian restaurant, inspired by the chef’s travels to the Amalfi coast in Italy. The menu spans whole fresh fish and pastas to lighter antipasti. A fishmonger will oversee a fish and seafood display. Flay is already teasing green tomato risotto with sea scallops and Osteria caviar; a lobster pasta with yellow tomatoes, basil, and Calabrian chiles; spaghetti with sea urchin and tomato; and paccheri with scorpion fish, cherry tomatoes, and green garlic.

A new sports bar with a vintage feel plans to open at Caesars Palace, overlooking the casino floor and Vanderpump Cocktail Garden. The resort filed paperwork with Clark County for $2.6 million in construction costs alone to renovate the 2,186-square-foot space in the Forum Food Court into Stadia Bar. The bar opens this spring with a 120-seat bar and lounge that gives the feel of a live sports arena.

David Chang’s eagerly awaited Bāng Bar opens this spring in the shuttered Pok Pok Wing space on the Cosmopolitan of Las Vegas’ second floor. Located at the entrance to the Block 16 Urban Food Hall, Bāng Bar takes its name inspiration from the Korean word for bread with a compressed menu of flatbreads cooked to order on the griddle, filled with a choice of rotisserie carved chicken, spicy eggplant, or pork and then folded into a U-shaped wrap or, the Office Bowl with rice, pickled onions, and cabbage, plus one of the three fillings.

Mr. Fries Man

Mr. Fries Man, a California cult-food sensation that only recently opened in North Ls Vegas is confirmed to replace the 1,350-square-foot Subway store at the Flamingo Market Place. The compact, counter-service menu specializes in big-appetite portions and the opportunity to customize each dish. Fry meals are served with cheese and a choice of sauce, plus piled high servings of barbecue, bacon, ranch and chicken, lemon garlic crab and shrimp, a chicken, bacon and Parmesan combination and plates topped with honey garlic shrimp and steak. A plant-based meat option is also available.

Bob’s Big Boy

A 3,000-square-foot Bob’s Big Boy opens at Skye Canyon Marketplace, taking over a convenient end space, with plenty of room out front for one of the legendary grinning Big Boy statues. The retro roadside coffee shop franchise continues its 71-year tradition of booths and lunch-counter seating inside. Famed for its namesake “double deck” burgers, thick old-fashioned milkshakes and a full menu of classic American dishes, Bob’s Big Boy already opened inside the Terrible’s Indian Springs, a 29-mile drive to the northwest from this new location.
